Like the saying, “An apple a day keeps the doctor away,” everyone knows we need to eat fruits and vegetables to live a healthy life. Fruits and vegetables can be both delicious and filling. Here is one way to use meal prepping to make healthy eating through the week easy!
What you need:
5-7 Mason Jars with lids. Pick a larger sized jar to fit the salad (1 pint)
2-4 Heads of Lettuce (Romaine, etc)
1 Bag of carrots
1 Bunch of cilantro and other herbs you like
1 c Sprouts (you can sprout beans, peas, broccoli, etc)
Any other favorite salad toppings (avocado, basil, etc)
Your favorite salad dressing
Cut the lettuce and other vegetables into small chunks for easy eating. Pack the lettuce down first and then place as many other vegetables as you can on top before securing the lid. Keep the jars in the refrigerator and pull them out at meal time or to bring with you to work for lunch or dinner.
I like cooking some chicken breasts before hand and dicing the breasts into cubes to place on top of my salad before I eat it. Don’t include the meat or salad dressing when packing the jar until the day of or right before eating!
