This weekend I finally decided to try out a gluten-free pizza crust I found on the internet by Laura on her Shoot The Cook blog (Here). It turned out amazing! Better than I expected for being a first time go at it.
I took some old-fashioned oats and ground them in my Ninja blender until it was of a flour consistency. This took some finagling but it worked! I doubled the recipe and used two cups of oatmeal flour, a half cup of milk, a teaspoon of baking powder, a sprinkle of salt, and six eggs (with two of the eggs I kept the yoke).
I then spread out the batter onto some parchment paper I laid over my preheated stone that had come right out of the oven. I then placed it back in to bake (400*F). It only took a few minutes before the batter firmed up like a moist (i used it!) pancake!
At this point, I removed the stone from the oven and carefully flipped the ginormous pancake over onto the stone without the parchment paper to allow the crust to get crispy. While out of the oven I proceeded to top the pizza with all the ingredients before finishing the baking to perfection.
The taste was good but different. It had a strong oatmeal taste that took getting used to but after a few bites, it was almost unnoticeable. I think in the future I will try baking the crust by itself a little longer directly on the stone for better crispness and add something like tomato paste, extra herbs, or garlic to the crust to help give it more flavor.
I will definitely make this again!

This is my favorite fruit salad! It’s a classic atour family gatherings around the holidays too! I hope you enjoy it as much as I do!
1tsp Orange Zest
1 Tart Apple
1 1/2c Grapes
3/4c Pineapple (or 1/2 a pineapple)
1.) Chop ingredients and put in bowl (use food processor for cranberries)
2.) Mix sauce and pour over fruit
3.) Stir well and refrigerate
The longer the salad refrigerates, the more blended and pronounced the flavors become! Enjoy!
Onions are no fun to cut. They make people cry with their intoxicating aroma. But, if you’re like me, I love onions on my salads and in many other dishes. While growing up, our family helped cook meals once or twice a month for a recovery program at our church. We often made tacos and I always volunteered to dice the onions. There is some satisfaction in taking the job nobody wants and learning how to do it effectively and then to feel like you bring value to the team. I did this with onions.
After a few months of studying and trying my hand at dicing the onion, I came up with this system as very effective:
1.) Grab your onion, a cutting board, and a sharp knife.
2.) Cut the ends off and peel off the outer layer of the onion.
3.) Cut the onion in half from the top as shown.
4.) Slice the onion into a bunch of ‘rainbows’ as shown.
5.) Now turn the onion and cut in the other direction, creating perfectly diced pieces of onion. As you get to the end of the onion, the onion will become taller than the length of its base.
6.) Lay it over with the knife as support and continue chopping as shown.
7.) Enjoy your perfectly diced onion on tacos, salads, or any other favorite dish of yours!

Cutting lettuce is often a difficult process. How do you wash it? How do you get bite-sized pieces? Is there a way to cut it efficiently?
Here is one way I learned to cut lettuce while working in the food industry while during my college years.
Step 1: Collect one head of lettuce, a chopping board, and a sharp kitchen knife.
Step 2: Cut off the base of the lettuce head like a triangle. This more accurately removes the less nutritious, flavorful, and hard inner leaves.
Step 3: Wash the lettuce by placing the head under the faucet and letting the water run up from the base through the leaves. Try to keep the head together as one piece.
Step 3: Cut the head lengthwise down the center. Holding the head together, turn the head 90* as shown below and cut lengthwise again, creating a crossway cut like a cross.
Step 4: Holding the lettuce head down and together, start chopping the head from one end and continue until the whole head is chopped.
Step 5: Pack into your mason jars, salad sack, or a Tupperware. Enjoy!
If you grow your own lettuce on a Tower Garden, this technique may be difficult unless you harvest the whole plant at once.
